Did you know there is a global edible snail shortage? In France, Italy and Spain appetites for Snails has created an industry worth ~€0.5BN as snails are low in fat and high in nutrients. Eva Milka from her small holding in Garryhill, Co Carlow is hoping to be the first of many Irish snail farmers by exporting 95% of her 10 Tonnes of snails every year as she sees Ireland’s climate as perfect condition for growing this delicacy.
